Welp, it’s been 11 days since I gave up dairy and I haven’t murdered anyone (yet) so that’s a good sign, right? I felt REALLY good the first five days: my skin was clearing up, I had more energy, and was completely headache-free. But towards the end of last week, all three issues were back in full force. I also realized how much dairy I ate accidentally (see: m&ms, popcorn, bread, etc). Did you know that dairy is in almost EVERYTHING? Because I did not know that. I am also still deciding if a life without cheese is a life worth living. In the meantime, I’m a girl of my word and I swore to give it up for 30 days so for the next couple weeks I will be paying extra attention to everything I eat. So far I have basically traded my cheese addiction for a carb addiction. I’m eating pasta and bread and more pasta and more bread.
Whether you’re off dairy or not, here’s a quick and easy pasta recipe for you…
Ingredients:
One pint grape or cherry tomatoes, halved
One handful fresh spinach
One handful fresh kale
1/4 cup chopped fresh herbs (I used basil, greek oregano, and parsley from my backyard)
1/2 cup chopped garlic/onions/shallots (I buy pre-packaged and pre-chopped from Trader Joes)
Directions:
Combine all ingredients in bowl and drizzle with EVOO. Mix. Put mixture in a large skillet over medium heat until tomatoes get soft, about 6-7 minutes, tossing frequently. Meanwhile, cook half a package of spaghetti noodles, reserving 1/4 cup of leftover pasta water.
Combine noodles, pasta water, and tomato mixture. Top off with a little salt and pepper to taste (and parmesan cheese if you eat cheese, you lucky thing!!!). Serve with side of bread and salad. Or just bread if you’re too lazy to make salad, like I usually am.
