What? I Have to Make the Pie!?

It’s been pretty busy around here with work deadlines, etc., leaving not much time for anything else, so I have been looking forward to Thanksgiving.

We usually do a potluck with several people at our house, and everyone brings their Thanksgiving specialties. I have a friend who usually brings the pies, and hers are delicious. But, this year she is recovering from foot surgery and immobile and won’t be coming. I decided to make the pie. I like to bake, and usually, it all turns out fine. However, the photo above should have been a hint as to how my first attempt would turn out.

I was blind baking the crust and using coins as pie weights, something I’ve done before. When I lifted the parchment paper and coins out of the pie shell, I set it on top of the range, not realizing that one of the burners was on. I didn’t notice until I smelled charred parchment paper and looked to see where the smell was coming from. I think the only thing that prevented it for going up in flames was the fact that it was still weighted down with coins.

At that point, I should have quite while I was ahead, but I forged on with the pie, and messed up something with the filling (didn’t ever set or back properly) so I had to throw it out.

But, we do have some die-hard pumpkin pie lovers coming later today, so I tried again, and this time, I think it worked. It looks good, at least.

Of course, I don’t know how it will taste, so I made a backup dessert that has never failed me—upside-down pear gingerbread cake.

So, I’m definitely looking forward to dessert.
