Weekly Roundup 25/04/14

By Mercedes Aspland @vegetarianyogi

I have to be completely honest and say that I have had quite a quiet week in terms of things that are worth sharing but there are some bits. I will start as usual with the most exciting recipes that I have seen this week. They are pictured above with all the amazing colours, yellow seems to be the theme this week. All of the recipes are detailed below starting from the top left hand corner and working clockwise:

  • This Mango Lemonade Smoothie Parfait from Keepin' it Kind just looks like one of the most amazing things I have ever seen and just got me running to the kitchen as soon as I saw it.
  • I am a bit of a geek in that I always watch Eurovision and we usually have some people come round. I have been looking for some interesting snacks to make and these Cinnamon Maple Roasted Chickpeas from A Touch of Zest will definitely make it on to my list.
  • Vegetable Noodles are one of my favorite things and these Mango Veggie Noodle Bowls with Creamy Ginger Dressing from GI365 looks amazing and another recipe to add to the list.
  • These Strawberry Rhubarb Scones with Sweet Cream from Oh Ladycakes look so yummy!
  • This Lemon Ginger Detox Tea from Simple Veganista looks really simple and something I could actually do with right now after a late night last night.
  • I have been looking for a decent Pasanda recipe recently and this Hemp Tofu Pasanda Curry from Vegan Richa looks like it will do the trick, if only I had somewhere I could buy Hemp Tofu.

So on to other bits for the week which I hope you like:

  • I went out to a Vegetarian restaurant last night and the food was amazing but I am paying for having my first glass of wine since 26th December. I know it was only one glass but I can really feel it and am regretting it now.
  • This post from Healthful Pursuit about acne was really useful. Over the last couple of years I have suffered from more spots than I ever have before even though I am more healthy than I ever have been before and so I have ordered some to see how it helps.
  • I mentioned it earlier in the week but over the Easter holidays I finished my course in nutrition with CfN
  • This is actually another recipe post it is Healthy Lemon Tarts from My Whole Food Life and it is actually making it in because the image made me laugh. It is probably my childish sense of humor but it just reminded me of something else.
  • One little nugget for you that shows how much TV I watch and it probably is not good for me but I managed to watch the whole of season 2 of Person of Interest over the last week and I will soon be on to season 3.
  • I have started looking for a job this week. It is about time I was sensible and sorted myself out and so I have started going through job boards and finding things I would like to do, it is quite an interesting process and is allowing me to clarifying my mind of what I really want.
  • The last thing to mention is this great post on Oh My Veggies about Smoothie Bowls and although I have not tried one yet this is definitely going on my breakfast list.
