It’s time for another weekend healthy recipes roundup!
I’m always in need of salad recipes, so this week I’m focusing on crispy, crunchy, colorful salad recipes shared by fellow healthy recipe developers.

When it comes to salad making, many of us are of the belief that if someone else whips up a bowl of greens, it’s somehow far more tasty.
I suffer from this same belief, so one of my favorite activities is searching out creative salad recipes. Let’s see what I found this week . . .
- Skinny Mayo-Less Cabbage Salad from Averie Cooks – the edamame added to this mayonnaise free salad intrigues me.
- Apple, Cranberry and Walnut Salad from Creme de la Crumb – you can’t go wrong with this classic salad.
- Italian Antipasto Salad from Skinnytaste – a terrific taste on an antipasto platter.
- Thai Chicken Salad with Spicy Peanut Sauce from My Kitchen Escapades – peanut sauce always makes Mr. Mike happy.
- The Ultimate Greek Chopped Salad from The Garden Grazer – I’d reduce the olive oil in favor of a crumble of feta, but this salad looks like a terrific lunch.
- 18 Mason Jar Salads from BuzzFeed – mason jar salads are all the rage at my place of work. I’ve yet to try them, and can’t wait to try a few of these.
- The Best Salad Ever from Dabbles and Babbles – this fruit and greens salad would be perfect for a dinner party.
- Light Egg Salad Lettuce Wraps from Lady Behind the Curtain – this protein packed salad looks creamy, and delicious.
- Grilled Ginger Sesame Chicken Salad from Menu Musings – I love Asian inspired salads. Ginger is a favorite ingredient.
- Southwestern Kale Power Salad with Sweet Potato, Quinoa & Avocado Sauce from Cookie + Kate – this isn’t a low calorie salad, but would make a healthy dinner.
- Broccoli Apple Salad from The Recipe Clinic – this is a terrific way to get your kids to eat their broccoli.
Did you find a salad that makes you drool? I’m going to try the egg salad lettuce wraps for sure, and the Southwestern Kale salad has my name on it too.
