Week 1:Citrus Chicken Skewers

Week one is of the challenge is officially over! Three weeks to go!Week one had some highs and lows. I passed by numerous french fries, chicken fingers and even said no to tacos. TACOS! Yes, I am serious. Every day at lunch my husband and I would take walks along our manufacturing floor to get some steps in and I even ignored the daily movie style popcorn my company has every day. EVERY DAY. The smell was intoxicating, but I soldiered on! I said no to alcohol twice when my friends were drinking, but don't worry I watched longingly as they sipped their red wine.
I made great decisions all week. Opting for a salad with grilled chicken instead of the quesadillas I actually wanted. I knew I was doing things right when I weighed myself on Friday and I had already lost two pounds! Whoop! For a 5'2 frame I will take it! I have had to get creative to get the flavorful meals I love,but lower in calories.
These chicken skewers are so flavorful! I have an indoor grill that I used. You can always saute them in a pan, but I like the charcoal flavor and grill marks that a grill gives the chicken. You can marinate these skewers in any citrus you like. I combine three to make a sweet and tart marinade. The citrus also tenderizes the meat. You can serve this chicken over a salad, with quinoa or with some veggies. Happy Grilling!
Citrus Chicken Skewers
Serves 2
Ingredients:
Zest and juice of a lemon
Zest and juice of a lime
Zest and juice of an orange
3 cloves of garlic ( roughly chopped)
1 tablespoon of olive oil
1 tablespoon low sodium soy sauce
pinch salt and pepper
handful of chopped cilantro
1.5 pounds of chicken cut into small chunks
wooden skewers
Directions: 
1. In a gallon sized zip lock bag add lemon through salt and pepper.Add chicken chunks and marinate for 30 minutes and refrigerate.
2. Drain marinade and skewer 4-5 chunks per skewer spacing them out.
3. Grill skewers for 5 minutes on each side until chicken is done.
4. Top with chopped cilantro and a squeeze of lemon.
