Wednesdays Unplugged - Grandma Alphie's Meatloaf

 NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. Went exploring with our son and their kids downtown on Saturday. This photo taken by our son is one of my all-time favorites... it captures their free, creative spirits! Last Sunday was my husband's big farewell from his job. I was the official paparazzi, taking photos all morning of him hugging and being hugged by hundreds of people. He will be missed... and he will miss them.

RECIPE OF THE WEEK

Last week my mother would have celebrated her 99th birthday. It seemed appropriate to make her meatloaf for dinner on Wednesday night. It ended up being a busy day so I just put the entire meal in the oven and it was baked to perfection and beyond... however, not a bite was left!  Just goes to show that you can't kill this meatloaf.  I used 1 1/3 pounds organic ground beef from Costco (the best ground beef I have found)... used one snack pack roll of wheat Ritz crackers for the crackers, petite diced tomatoes (didn't used the whole can as I tried to follow the actual recipe as closely as possible but I remember her putting in a full can of whole tomatoes and mixing thoroughly with her hands. I topped it with 1/2 cup ketchup mixed with 1/4 cup brown sugar, and several bacon strips. The recipe below is exactly as I got it from her.

GRANDMA ALPHIE'S MEATLOAF

  • 1 pound ground beef
  • 1/4 pound pork sausage
  • 1 teaspoon salt
  • 1 egg
  • Cracker crumbs
  • 1 tablespoon milk
  • 1/2 cup tomatoes
  • 1/4 medium onion
  • Strip of bacon on top if desired

Bake 1 1/2 hours at 350 degrees F.
