Wednesdays Unplugged - Eleanore's Vegetable Salad

 NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes...and love getting recipes you would like to share!

This has been a busy family week. We celebrated out 43rd wedding anniversary, went to Little League day at the Twins with our grandson, had an awesome day at Valley Fair when my company, RE/MAX Results, bought out the whole park for employees, sales executives and their families.

RECIPE OF THE WEEK

When we were in North Dakota last week my aunt served a recipe she got from my dad's cousin. It reminded me of church dinners growing up on the farm. It is called a vegetable salad... that keeps for 3 weeks! This isn't quite Throwback Thursday, but this recipe feels like it. The most important ingredient is love, and times shared with family.
