We Found Two Ripe Bananas Sitting in the Kitchen Looking Lost...

By Suvenchow
So mommy decided to put them to good use! LOL

After a few minutes of browsing the internet for a simple recipe, I decided to follow Nigella Lawson's Banana Muffin recipe. Because I didn't have a few of her ingredients and was too lazy to head out, I made some improvisation. ;)
Here's what I amended from the original recipe:
  • 75 grams butter (melted)
  • 250 grams self-raising flour
  • teaspoon baking powder
  • ½ teaspoon bicarbonate of soda
  • pinch of salt
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 115 grams caster sugar (50g raw organic sugar)
  • teaspoon vanilla extract
  • teaspoon honey
  • large bananas (ripe)
  • medium eggs
  • 125 ml milk (oats milk)
  • Cadbury choc chip melts
The result? Yummy low sugar banana goodness!
