Watermelon rind kheer recipe , healthy Indian dessert. Most of us discard the rind part in watermelon as not usable.But we can prepare many Indian desserts or gravies using this watermelon rind. I was bit skeptical to try this watermelon rind kheer as I don’t have any idea of rind recipes. Trust me, its perfect dessert to try. This kheer recipe tastes exotic both hot and chilled. I added milk powder for thickness. We can replace this with Condensed milk also. Adjust sugar accordingly if you add sweetened condensed milk.
I have read several benefits of watermelon rinds. It is good for skin,immunity and nervous system.

Here is the method of how to make watermelon rind kheer recipe :
Watermelon Rind kheer Recipe
Prep time : 10 mins | cook time : 20 mins | serves : 3

Ingredients:
- Watermelon rind – 1 cup (Shredded)
- Milk – 2 cups
- Milk powder – 2 tbsp
- Sugar – ½ cup
- Cashew and raisins – as needed
- Ghee – 3tbsp
- Cardamom powder – ½ tsp
- Saffron – few strands (optional)
Method:
- Heat a wok or strong bottomed pan, add ghee, after it gets heated add cashews and raisins. Roast well, drain the ghee and keep it in a separate plate.
With the remaining ghee, add shredded watermelon rind(chopped) and sauté for 2 mins or until the raw smell leaves. - Add milk powder to it and give a quick stir.
Add milk and allow it boils for few mins. Stir in between and check the rinds are cooked well. - If the kheer is slightly thick than usual add sugar, roasted cashews, cardamom powder, saffron, and raisins.
- Give a quick boil till the sugar dissolves completely and turn off the flame.
Serve hot or chilled.
