In my previous post I discussed how awesome my new Vitamix was. Well, so far it exceeds my expectations, not only as a blender, but as a food processor as well. The Vitamix came with a pretty hefty, hard cover cookbook. I was unsure how I would like the recipes. But so far, so good.
Is there anything this blender can’t do?
We shall see.
{Recipe adapted from Vitamix}
Vitamix Zucchini Burgers
Ingredients:
2 Pounds Zucchini cut into large chucks
1 Large Onion quartered
1 1/2 C Italian Seasoned Bread Crumbs or GF Bread Crumbs {I used Panko}
3 Large Eggs {use flax eggs or 1/2 C. Hot Cooked Brown Rice as a binder for Vegan Option}
1/2 C Shaved Parmesan Cheese {omit for Vegan option}
1 T. Garlic Powder
1 T. Onion Powder
1 t. Dried Parsley
1 t. Dried Basil
1 t. Dried Oregano
Canola Oil for frying
Get Blending.
1. Place zucchini in Vitamix container, add water until zucchini floats, secure lid.
2. Select #8 on Vitamix.
3. Pulse 7-8 times or until chopped into very small pieces, strain in colander, and pat dry until there is minimal moisture left on zucchini.
4. Chop onion in Vitamix on #3, pulse 4-5 times.
5. Combine all ingredients {except for the oil}, and stir until thoroughly combined.
6. Shape into small patties {about 3-4 inches in diameter}.
7. Heat a few tablespoons of oil in frying pan.
8. Cook each patty for about 4 min. on each side until well browned.
{Can also heat oven to 375 and cook for 30 min… flipping half way.}
Top with your favorite burger toppings!
