Victoria Sponge

Ingredients
6oz Self raising flour
6oz Margarine
6oz Caster Sugar
3 eggs
1 Tsp vanilla
1 Tsp Baking powder
50g Butter
150g Icing sugar
1 tsp vanilla
2-3 tsp milk
1-2 Tbsp strawberry jam

In a mixing bowl add self-raising flour, margarine, caster Sugar, eggs, tsp vanilla and baking powder

Mix on medium speed for about 2 minutes

Equally divide between 2 greased cake tins

Bake for 20-25 minutes at 170c

Add remaining butter, icing sugar, vanilla and milk and beat together.

Spread the butter cream frosting over of the cooled cakes

Spread jam on the bottom side of the other cake

Sandwich together and you have your very easy viccy sponge!
