Seviyan Kheer also known as vermicelli pudding, sevai ki kheer or semiya kheer is a delicious Indian dessert made using vermicelli and milk.
In North-India it's called kheer and In South-India it's called Payasam. It is made by using milk and vermicelli flavored with cardamom and loaded with dry fruits.
At my home everyone loved meetha, & they have big sweet tooth😍 including me..I love desi Indian sweets so much, so usually make at home on an easy way.
So whenever I have no time left to make a sweet treat, I can rapidly prepare this vermicelli kheer recipe this one or sometimes dried meethi seviyan . For this recipe, you can likewise substitute Seviyan with Sabudana(sago) to make it..
MY MIL prepared custard vermicelli kheer for the bhog of ganpati bappa 🙏 thats also very easy, kheer will prepared in a same way as this recipe is & the addition of custard powder mixing in milk added few minutes when kheer is going to be ready..so the custard powder can easily mixed up with kheer. Garnish with tutti frutti!!
What is Seviyan ?
Seviyan or Vermicelli is known as Jave in North India especially in UP and it is prepared in sweet and savory form. In Earlier days, Jave were homemade and handmade by ladies in an traditional way, during winter time.
So for this kheer, seviyan were first roasted in ghee and then cooked in milk and sweetened with sugar. How easy, isn't it?
How to make Homemade Seviyan in earlier days?
All ladies were sitting outside of the house for making those jave with their hands, make a large large batches in few days. I remember when we were small kids, our dadi(granny) also make jave at home, after finishing their daily routine work, they sit with their friends, outside the home..they make jave, kept in a big thali or muslin cloth & kept it under sunlight for drying..
While making the jave, ladies were on full on gupshup mode (kuch idhar ki or kuch udhar ki 😀😀) eating snacks or drinks also going on during that time. That's my personal experience😅 and that was a great memories which never fades. I think those are the best moments of life 💜💜
Now a days, Vermicelli are easily available in markets both roasted or without roasted. We usually pick roasted one for both sweet and savory snacks. This kheer is made up with roasted vermicelli.
Difference Between Seviya Kheer and Sheer Khurma
Vermicelli or Seviya Kheer is very similar to the Sheer Khurma that is famously made during EID festival, yet Sheer Khurma is more extravagant than the kheer because of the addition of dates and loaded with nuts.
Vermicelli pudding is a dessert that is a must on all special occasions. It is very easy recipe and made with minimum ingredients and it's definitely worth to try!

[1 cup =240 ml]
Ingredients :
Broken Roasted Seviyan/Vermicelli - 1 cup Full cream milk -1 litreDesi Ghee/ Clarified butter - 1 tbspSugar - 1/2 cupRaisin - 1 tbsp Cardamom Pods(seeds and skin)/ Cardamom powder - 4 pods/ 1 tsp Saffron threads - 8 to 10 threadChopped Dry Fruits (Almonds, Cashew ) - 2-3 tbsp
Preparation Method :
1. Heat ghee in a deep pan. Add broken seviyan and roast it for 2-3 minutes on low flame.
2. Add chopped dry fruits, raisin and roast it again on low flame for 2 minutes.
3. Add milk, stir it continuously till milk bring it to boil.
4. Add sugar, again boil it till seviyan cooks properly and milk mixture becomes thicker.
5. Add cardamom pods (seeds as well its skin also) that gives natural flavor to dish or you can use the cardamom powder too, few threads of saffron and mix it well, cook it for 1-2 minutes.
6. Scrap all cream from the sides in between. Check weather the vermicelli is cooked or not, if it yes then switch off the fame, if not then cook for few minutes.
7. Seviyan Kheer or Vermicelli Kheer is ready for serve. Serve it cold or hot as per your choice.It's tasty more when its cold.
Notes
- Always roast seviyan on low flame to avoid burning.
- Adjust milk quantity for thicker or thinner kheer consistency as per your choice.
- Use full fat milk to make the kheer for best results.
- You can skip adding saffron if you wish to.
- When it is cooked, checked using your finger it is easily mashed or not
