Vermicelli Kheer
1/4 cup vermicelli (sevaiyan)1/2 cup sugar4 cups milk½ cup condense milk1/4 cup chopped dried fruits2 tablespoon raisins (kismis)2 tablespoon dates (khajur)1 teaspoon chironji1/4 teaspoon cardamom (elaichi) powder2-3 pinch saffron (kesar) Method:
Heat the ghee in a deep pan, add the vermicelli and fry till it turns golden brown. Keep a sideBoil the milk and saffron in a deep non-stick pan. Add fried vermicelli, mix well and cook on medium heat for 5=8 minutes..Add the sugar, condensed and stir till the sugar dissolves.Now Add the dry fruits and raisins, mix well and allow it to simmer for 3 - 4 minutes.Add the fresh dates, chironji, cardamom powder and and simmer for another 1 -2 minutes. If the sheer korma is too thick, add a little hot milk or water and mix gently.Remove from the flame and serve hot or cold garnished with dry fruits of choice
