Vegetables Kathi Roll

A very fancy and stylish way of making kids eat regular chapathi/subzi,I think this would be the perfect explanation for today's dish.veg kathi roll :). Kathi roll hailing from Kolkata is essentially a wrap made of wheat/all purpose flour with any kind of stuffing in it.I have had this many a times in my office cafeteria and liked it.Few days back I saw a picture of this with simple recipe in a magazine and tried it out with my sister,where she took care of stuffing and wrapping :).I just took the recipe as outline and changed the filling to suit our taste completely.This will for sure be a hit when packed along with a salad for kids lunch.The only time consuming part in this recipe is stuffing and rolling,else it is such a simple recipe where you can use left over chapathi/paratha dough and any subzi along with some spicy chutney.You can be totally creative and play with ingredients and different kathi rolls.Over to recipe :)
Vegetable kathi roll recipeStar ingredients:Wheat flour,potato and carrot
Time:1 hour
Yield:9

Ingredients:
1 1/4 cup whole wheat flour
1/4 cup all purpose flour
2 large potatoes boiled peeled and mashed
1 large carrot peeled and grated
1 small green bell pepper chopped very fine
2 large onions sliced very thin
1/2 teaspoon crushed ginger-garlic
2 green chillies slit
2 teaspoons tomato sauce,chilli sauce
1 teaspoon garam masala powder
1 teaspoon chaat masala powder
1/4 cup tomato chutney
Salt
Oil
Method:
1.Mix both the flours with required salt and 1/2 teaspoon oil.Combine well.Now add 1/2 cup water and knead to a smooth pliable dough.Let it rest for 30 minutes.
2.Mash the cooked potatoes well.In a kadai add some oil and temper with green chillies,ginger garlic and half of sliced onions.
3.Add the chopped vegetables and saute well.Add the mashed potatoes,salt and garam masala powder.Saute till well cooked.
4.Add tomato sauce saute in low flame for 5 minutes,add chaat masala and remove from flame.
5.Now pinch a lemon sized ball from prepared dough and roll out a thin circle a little more big than chapathi.
6.Heat a kadai and cook the chapathi completely from one side and till 3/4th done from the other side.Repeat the same with the remaining dough.

7.Now take one chapthi,and apply some chutney on half cooked side.Spread  it well and keep stuffing as shown in picture.Sprinkle some raw onion slices.
8.Make a pocket as seen in picture.
9.Cook the warp on medium flame for 3 minutes in cast iron tava
10.Serve hot.
Notes:
1.If not packing for lunch,you can make this wrap more simple by just closing from both sides like masal dosai.
2.You can even add paneer and any other vegetables of choice
3.Ensure to cook the inner portion until 3/4 else it may remain uncooked after stuffing and cooking the outser side.
4.You can replace sauces with fresh tomato puree with a pinch of sugar.
