Ingredients:
1 1/2 cups thin vermicelli ( I used roasted bambino vermicelli)
1 large tomato chopped
1 large onion chopped
1 carrot chopped fine
1 capsicum chopped fine
1/2 sweetcorn kernels + peas
2 green chillies
1 small piece ginger crushed
1 tsp sugar
1 Tbs lemon juice
1 tsp mustard + cumin seeds
1 tsp urad dal
1 tsp gram dal
handful cilantro
Salt to taste,a pinch of turmeric powder
Method:
1. Heat little oil in a kadai, add mustard, cumin seeds,urad dal,gram dal and let them splutter
2. Add green chillies, crushed ginger and saute.
3. Add chopped onions, tomatoes,sugar and saute
4. Add all the vegetables and saute well for ten minutes
5. Now add the vermicelli,fry for 2 minutes,add 2 cups of water and close the lid and cook for 7-10 minutes.
6.Add lemon juice,garnish with cilantro and serve hot.

Notes:
1.Roast the vermicelli for five minutes until it turns golden,if using normal unroasted variety
2.Ghee could be used instead of oil when cooking for toddlers.
3.Pair it up with a milkshake for light yummy dinner :)
