Vegetable pulao
Star ingredients:Basmati rice and vegetables
Time:30 minutes

Ingredients:
1 1/2 cup basmati rice
1 1/2 cup chopped vegetables(cabbage,carrots,beans.baby corn,peas,potatos etc)
1 large onion chopped
Ginger garic crushed
2 cloves crushed
2 cardamoms crushed
3 green chillies
Handful mint leaves chopped fine
1 teaspoon coriander seed powder
2 table spoons curd
1 teaspoon cumin seeds
1 teaspoon mustard seeds
Spring onion greens
Oil+ghee
Salt
Method:
1.Cook basmati rice with just enough water so that the grains remain separate.Chop the vegetables thoroughly and chop them fine.
3.Add onions and saute till golden.Next add mint leaves and saute for a minute.
4.Now add the vegetables and saute for few minutes.Once vegetables are cooked for a while,add coriander seed powder and saute well.
5.Now add curd and combine well.Add salt,cover and cook well till the vegetables are done.
6.Now add the cooked rice to the vegetables and cover for 5 minutes.
7.Then slowly mix without breaking the rice grains.Garnish with spring onion greens and serve hot.
1.In this recipe there is no other masala like garam masala etc.So It is very important to use fresh vegetables and the spices we use.
2.Instead of curds you can add tomatoes.
