Vegetable Paneer rolls are great easy fusion dish combining the lovely taste of Indian spices with paneer wrapped in puff pastry.
These vegetable paneer rolls are great lunch or light dinner option specially when served with a fresh salad. The Kids and husband loved these, now keep asking for them!
You could actually fill them with lots of delicious fillings, you could have these very universal.
Adding paneer to the dish adds extra protein to the dish, if you have never heard of paneer, it is an indian cottage cheese form, but very similar to halloumi in texture where it doesn't melt. I have a blog post to make paneer yourself, which is what I do now. You can buy in your local supermarket like Tescos or Sainsburys.
This could be a tear and share type party food with drinks if you having a social gathering at home.
Ingredients
200g Baby Potatoes
1 Small Onion
200g Paneer
1 Red Pepper
2 Handfuls of Spinach
1 1/2 Tbsp Oil
1/8 Tsp Mustard Seeds
1/8 Tsp Cumin Seeds
2 Garlic Gloves
1/2 Tsp Turmeric
1/2 Tsp Garam Masala
1 Tsp Chili Powder
1 Tsp Ground Cumin
1 Tsp Ground Coriander
1/2 Tsp Salt
2 Tbsp Tomato Puree
1 Pack of Puff Pastry
Chopped up baby potatoes, onions, paneer, red peppers with 2 handfuls of spinach.
Heat up oil in a pan, once hot add mustard seeds and cumin seeds, after 10 seconds add the vegetables with crushed garlic and cook for about a minute.
Add turmeric, garam masala, chili powder, ground cumin, ground coriander and salt to the vegetables continue to cook and stir occasionally
Add about 100ml of water and tomato purée to the vegetables and stir well.
, Bring to the boil and allow to simmer for about 15 minutes.
Check to make sure the potatoes are cooked, then allow to cool a little.
Heat oven at 200c, then on a floured surface start to roll out the puff pastry.
Roll into a large thin rectangle
Spread the cooked mixture, try and make sure its cool ( mine was still warm and made the pastry to warm in areas and started to split)
Roll up the pastry evenly
Slice into 2 inch sections and lay into a baking dish
Bake in the oven for about 20 minutes and serve!
