For Vegetable Latke Ingredients: 2 Potato, peel and grated 2 Carrot, peel and grated 1 Onion, peel and sliced 1/4 Cup Cornflour Salt to taste Red Chili Powder to taste Black Pepper Powder to taste Oil for shallow frying
Instructions: Combine grated vegetables in bowl. Add spices and cornflour and mix well. Heat the non-stick pan with little oil on medium flame. Place the pattice form mixture and fry them until to crisp and golden. Drain them on kitchen towels to remove excess oil.
Notes: Squeeze the grated potatoes first to remove excess water. You can use any vegetable which available in season like zucchini, reddish, gourd or more. Even you can add whisked eggs instead of cornflour.
For Apple Sauce
Instructions: Peel and chop the apples. Combine all ingredients together in pan. Heat this on medium flame until to apple becomes soft. Keep aside to cool at room temp. Blend this mixture until to smooth consistency and remove in separate bowl. Store this sauce in airtight jar for further use.
Notes: Adjust the sugar according to apple sweetness or tastebuds. If you have cinnamon powder is not available at present, add two sticks at the time of boiling and remove it before blending. You can use green apple also instead of red apple.
For Sour Cream
Ingredients: 1 Cup Cream or Hung Curd Salt to taste Red Chili Flakes to taste 1 Tbsp. Parsley 5 Tbsp. Lemon Juice
Instructions: Combine hung curd or cream, salt, red chili flakes and parsley together and whisk well. Add lemon juice and whisk again till to smooth consistency. Sprinkle parsley and red chili flakes on the top of sour cream. Serve as dip with vegetable latke.
Notes: I prefer hung curd instead of cream. You can add grated cucumber or chopped fresh parsley for variation.
