Vegetable Fried Rice(indo Chinese)

A variety rice that is loved by most Indians :). Indochinese cuisine has evolved so much here in India that we find a small eat out that serves these dishes in every corner of a street and people go crazy about it.While I love few dishes like schezwan fried rice,veg fried rice etc from this cuisine,I am not great fan of dishes that uses a lots of sauce.I think I have said here before,I don't use any store bought sauce or condiments in my cooking and I just have not acquired a taste for soya sauce.So with all these restrictions I tried recreating the famous Chinese fried rice(Indian way of course) and we liked it better than the ones served in restaurants.The beauty of this dish is that it is very mildly spiced and it is very healthy as it avoids any store bought sauces.Try it out n let me know :)
Vegetable fried rice recipe
Star ingredients:Assorted vegetables,rice
Time:20 minutes
Serves:3
Ingredients:
1 1/2 cup cooked rice(Grains separate)
1 cup cut vegetables(carrot,cabbage,peas,sweet corn kernels etc)
3 spring onions(Cut the white part into rings and save the greens for garnishing)
2 tablespoons chilli flakes
1 small piece of ginger crushed
1 teaspoon sugar
1/2 teaspoon vinegar or lime juice
Salt
Sesame oil
Method:
1.Heat sesame oil in a thick kadai till smoking point add the chilli flakes and turn off the heat.
2.After two minutes switch on to medium flame and add sugar to the chill flakes in oil.mix well.
3.Add the cut white onions and saute for a minute.Add all the vegetables,salt,lime juice/vinegar and saute in maximum flame.
4.Add the cooked rice,1/4 teaspoon chilli flakes,drizzle some sesame oil and keep covered for 10 minutes.
5.Mix gently and combine well.
6.Serve hot with lime n chilli in vinegar
Notes:
1.The chilli flakes steeped in oil is the substitute for chilli sauce.You can use plain sesame oil and use chilli sauce instead.
2.I did not use cabbage as I did not have.You can add cabbage,celery etc for more flavor and taste
3.You can even use normal rice instead of basmati rice,just make sure it is well cooked but not ushy.A day old rice works perfect.
