Vegetable clear soup recipe - easy and healthy soup anyone can make instantly with available vegetables. It's a one-pot soup recipe, you can use instant pot cooker as well. Soups are always a healthy choice and it is less weight to consume late nights as well. I choose soups for my midnight cravings as it will digest easily. Recently I came across vegetable clear soup recipe by Sanjeev Kapoor, it tempted me to make immediately. So I tried with available veggies at my pantry. You can add peas and cauliflower or broccoli also.
I believe you will enjoy this easy homemade vegetable clear soup.
How to make vegetable clear soup :
- Chop big onions, carrot, beans, potato, cabbage, ginger, and garlic finely.
- Heat a saucepan, add 2 tbsp of oil, add the chopped veggies and saute for 30 secs.
- Close with a lid and cook for a minute in low flame.
- Stir well and add two to three cups of water and enough salt.
- Cook covered until the veggies are done.
- Meanwhile, mix a tbsp of cornflour with enough water to make a runny consistency.
- Add it to the soup. Cook until the soup gets slightly thickening like soup consistency.
- Turn off the flame. Serve in bowls topped with pepper powder.
