Vegan Jelly with Blueberries- Vegan MoFo 2014

I loved jelly as a child, my mum always used to serve it in a rabbit shaped jelly mould with fruit and often the fruit would be stirred into the jelly before setting. Like a jelly piñata :)

As I got older fruits set in jelly became a 'posh' thing you'd find in Waitrose and now I don't make jelly without them! Especially champagne jelly with strawberries! mmmm. This time I used blueberries but they went quite tart as they absorbed the jelly flavour so next time I may use raspberries or I might even have a childhood throw back and use canned fruit such as peaches and pineapple.

I found a few store bought set jellies which are suitable for vegans (such as the M&S ones) but I missed making my own. Then I found these "just whole foods" jelly crystals that come in all different flavours; raspberry, strawberry, lemon and tropical.


You make it just like non vegan jelly, pour crystals in a bowl, add a pint of boiling water, stir in fruit and then set in the fridge for a few hours or over night.

I was really impressed, it wobbled like jelly, it tasted like jelly and it made me feel like a kid again!

Also the colouring is made from beetroot and not crushed up bugs, so that's a bonus :) There is no real recipe here just make up the jelly to the instructions on the packet (mine was 'add 1 pint of boiling water and stir'), add fruit such as berries or chopped fruit. Then pour into a bowl or jelly mould and set in the fridge.
