Vegan Chorizo Cornbread Stuffing

I really don't understand why we wait until Thanksgiving to enjoy stuffing. Every year, I tell myself I'm going to make stuffing throughout the year...and every year, I realize that absolutely did not happen. But it's ok, because as they say, good things come to those who wait. Well, I've waited, and I'm ready! If you ask me, it's all about the sides during the holidays. GIVE ME ALL THE CARBS!

My dad is the official stuffing chef of the family, and he takes his role very seriously. The stuffing is always the last item to be made, so that it's piping hot and fluffy when it comes to the table. His recipe features crumbled pork sausage, and it's so good! But this year, Thanksgiving is in my house, and I needed a recipe that could be enjoyed by everyone, including my vegetarian and vegan friends and family.
