Vegan Chocolate Breakfast Pudding

I can’t take credit for this one guys. I found the original recipe here. But it’s PUDDING FOR BREAKFAST. (Or whenever). It’s got Chocolate and coffee and I’m kind of all into Chia seeds right now, and it’s less than 200 calories per serving! Why chocolate for breakfast? Because reasons.

Vegan Chocolate Breakfast Pudding

  • 1⁄2 cup brewed coffee (cooled)
  • 1⁄2 cup full fat coconut milk
  • 1 heaping tablespoon almond butter (or other nut or seed butter)
  • 1 teaspoon vanilla extract
  • 2 tablespoons organic maple syrup or honey
  • 1 tablespoon unsweetened cocoa powder
  • 1⁄4 cup chia seeds*

Instructions

Throw everything is a blender and mix well. Then spoon into 4 dishes or mugs and chill for a minimum of 3 hours or overnight.

I’ve eaten this for breakfast (I have two servings for that) as well as a mid-afternoon snack. The chocolate flavor takes care of my cravings, the coffee gives me energy, and the fiber in the chia seeds (they expand to twice their size) make it really filling!

Oh yeah, and it’s only 163 calories per serving.

(By the way, this makes a fabulous dessert, just leave out the coffee so you won’t be up all night!)
