veg shorba recipe
stew made with veggies and spices
Ingredients
- chopped veggies - 2 cups
- onion - 2 roughly chopped
- tomato - 2 roughly chopped
- coconut - 1/4 cup
- chopped mint and coriander leaves - 1/2 cup
- ginger , chopped - 1 teaspoon
- garlic - 3 cloves
- green chilli - 2 nos
- bay leaf,cardamom and cinnamon stick - for tempering
- red chilli powder - 1 teaspoon
- coriander powder - 2 teaspoons
- garam masala - 1/4 teaspoon
- turmeric powder - 1/4 teaspoon
- salt - to taste
- oil - as needed
- Blend onion,tomato,ginger,garlic,green chilli,coriander and mint leaves along with coconut into a fine paste with enough water.
- Boil the veggies either in steamer or with enough water until they are 3/4th done.
- Heat oil in a kadai and add the ingredients for tempering and then add the paste which we ground before.Add enough salt at this stage and mix it well.
- Saute it till the oil separates and then add the spice powders-turmeric powder,red chilli powder,garam masala,coriander powder.Add little water and then saute it well.
- Add boiled veggies and enough water to get the stew consistency.Boil it for 5 to 7 minutes in low flame till oil separates.
- Once it get done,switch off the flame and add chopped coriander leaves.
