Vanilla Walnut Oatmeal Twice Baked Bread

Do you detest wasting things? Like throwing out money, right? Well, if you have some day old or dry hard bread then you might want to keep this recipe in mind. It’s kind of a take on French toast, but I used it for a dinner meal~~the slightly sweet coating gave it a finishing touch that went well with our savory meal.

I find that the French baguette bread, you know the long skinny hard (already even when fresh) breads I buy in the deli get even harder on days two or three, so unless you eat it all, you could be maybe chipping a tooth on it when you bite in. Since I needed bread for the night’s meal, I decided rather than dash to the store, I’d create a twist on French toast!

Serves: 6
Preheat oven to 400

What you need:
1 French baguette torn into about 2” pieces (day old or dried bread is best)
1 egg, beaten
1 cup buttermilk
1 tsp. vanilla
¼ tsp. sea salt
3 cups Dole Fruit & Oatmeal ‘Peaches & Vanilla Walnut Oatmeal’—you will use only the oatmeal—open and put in a large mixing bowl—reserve the fruit for eating later!
4 Tbl. unsalted butter, melted

What you do:
Combine in a large mixing bowl the egg, buttermilk, vanilla and salt and whisk together. Add half the bread and coat fully with the mixture. Push to the side and add the remaining bread. Keep turning the bread on all sides, gently pushing on the bread, then letting it sit for a few minutes to soak in the buttermilk/egg mixture. Repeat this process.

In another large mixing bowl, add the oatmeal. Break into a crumbly fine mixture with your fingers. Take about half of the bread at a time and toss and coat well. Place each piece on a parchment paper lined cookie sheet. With remaining oats in the bowl, simply spoon it up and press into the bread.

Coat each piece with about ½ to 1 teaspoon of melted butter.

Bake in a preheated 400 oven for minutes.
