As my son’s birthday was during a week day, I thought it would be nice for him to take some cupcakes to Cubs ( Scouts) to share with the pack and make his birthday a little more special.
Since his birthday is close to Easter, I thought I’d make some Easter inspired cupcakes using tiny micro eggs I found at Sainsburys
Kids love chocolate! These vanilla cakes with the added chocolate toppings make it a simple but yet great combination.
Ingredients
4oz Margarine
4oz Caster Sugar
2 Eggs
4oz Self Raising Flour
1/2 Tsp Vanilla
1 Tsp Baking Powder
2 Tbsp Milk
40g Micro Eggs ( Chopped)
Micro Eggs to Decorate
Chocolate Buttons
Sprinkles
50g Butter
1/2 Tsp vanilla
1 Tbsp Milk
3 Tbsp Cocoa
Icing Sugar
Add margarine and sugar to a mixing bowl and cream together
Add milk, egg, flour, vanilla and baking powder to the mixing bowl
Mix again for about 2 minutes on medium speed
Stir in chopped micro eggs into the batter
Spoon into cup cake cases
Bake at 170c for 15-20 minutes
Add butter, icing sugar, cocoa, vanilla and milk to a bowl
Mix and add icing sugar until it forms soft peaks and pipe-able.
Pipe butter cream over the cakes and decorate with micro eggs, buttons and chocolate sprinkles.
