There is nothing like a simple moist fluffy vanilla cupcake with sweet creamy indulgent frosting, you always have that hidden desire to want to stick your finger into the frosting before taking bite of the cake! It's like having the little trial run.
These particular cakes I made for my fathers birthday, hence the chocolate K on the cakes, but this is my all time favourite simple go to cupcake recipe for any occasion or just because I want to do a little baking with the kids.
The vanilla cupcakes can be so versatile, you add a little food colouring to the batter maybe a few drops of red to pink bright pink cupcakes and colour the icing pink add a few pink sprinkles or smarties and you have super cute girly cupcakes for your special princess. You can keep them simple with more grown sprinkles and make them sophisticated for when entertaining.
To be honest, if you hate the rich sweetness of frosting then keep the cakes just plain or spread a little jam over the cake to make a mini jam sponge. I actually loved these just plain without the frosting covered with a little custard.
Ingredients:
4oz Margarine
40z Caster Sugar
4oz Self Raising Flour
2 Eggs
1 Tsp Vanilla
1 Tbsp Milk
Vanilla Icing
Sprinkles
Using the all in one method, add the flour, margarine, sugar, eggs, baking powder, vanilla and milk to a mixing bowl and beat on medium speed for 2 minutes
Ensure the batter is smooth
Scoop into cupcake cases
Bake in the oven at 170c for 20-22 minutes until light brown and the cakes spring back up to the touch.
Pipe on vanilla icing over the cup cakes and decorate with sprinkles
