Valentines Red Velvet Pancakes

As Valentines Day is approaching fast, in case you forgot its February 14th! Why not treat that special someone with some yummy breakfast red velvet pancakes with some creamy cheese sweet icing.

Red Velvert is usually a cake that is red-brown or dark red in colour and topped with cream cheese icing, usually made with buttermilk, cocoa, flour and red food colouring.

If you don't have any buttermilk, then you can alway use milk and vinegar which effectively makes buttermilk. Thais my quick tip of the day.

I made these pancakes 3 different ways, the traditional crepe style pancakes, hand piped heart shaped thin pancakes and slightly fluffy mini heart shaped pancakes.

I think that the bananas truely completement the flavours with the red velvet, cream cheese and chocolate. They add the healthy five a day to the breakfast. I think that raspberries would work brilliantly too.

Red velvet is a staple cake type in the America and Canada, we here are starting to see more red velvet however not as well known.

My children and the hubster definately enjoyed this breakfast, they skipped lunch as they ate a few too many!

Add milk and vinegar to to a blender and allow to sit for about 3-5 minutes.

Then add eggs, vanilla, oil, sugar, salt, cocoa powder, plain flour and red food gel. Blitz for 30 seconds on high speed.

Pour the batter into a bowl

In a mixing bowl add soften butter, vanilla, milk and cream cheese and mixing well.

Add icing sugarand beat together until smoothe.

For the heart shaped mini pancakes, heat a shallow fry pan over medium heat and place a metal cutter on the pan.

Add the pancake batter to the cutter.

After about 30 seconds lift away the cutter.

Then flip the pancake and cook the other side.

To create a larger pancake, pipe an outline heart shape

Pour batter into the shape and cook both sides, or althernatively make plain basic crepe style pancakes.

Arrange the pancakes on a plate, drizzle on the cream cheese topping and some heart shaped banana pieces.

Or stack mini heart shaped pancakes with cream cheese topping and bananas.

Melt a little dark chocolate and drizzle over the pancakes and enjoy!
