Good Morning! Thursday is my Friday at work(teaching) so it's a good day! When I got home from class yesterday I was VERY hungry. I stopped at the grocery store before coming home and every smell was making my mouth water. Going to the store these days is quite simple because the only area I need to go to is Produce. The idea that healthy folks shop the perimeter of the grocery store is true!! I got home and made myself my favorite salad ~spinach ~red peppers ~cucumbers ~strawberries ~almonds ~feta and ~balsamic vinaigrette... om nom nom!!
For dinner last night I felt like making my water special. I served it up in a wine glass with some lemon - what a difference in taste! Don't underestimate the simple things in life...
I was feeling adventurous in the kitchen. I bought some wild caught cod and created this tasty dinner!
- cod fillet
- 1 egg
- 1/2 cup raw sunflower seeds
- 3 Tbsp hemp seeds
- lemon
- garlic gold, seasonings of choice
Directions: Pulse seeds in food processor with spices. I used sea salt, garlic powder, cracked pepper, and brewer's yeast. Beat one egg. Dip fillet in egg, then roll it in seed/spice mixture. Place in shallow baking pan and bake at 350degrees for about 20 minutes or until fish flakes with a fork. Serve with fresh steamed peas.(My mom
always had peas with fish.) The apple doesn't fall far from the tree...
I woke up this morning craving coffee again...*sigh* I drank my water, then whipped this tropical tasting green smoothie. I
obsessed thought for a long time about what kind of smoothie I wanted... This was not what my head was craving, but I though my body might be. :)
In the mix: -2cups spinach tightly packed -1/ 2 green cucumber -1 green apple -1scoop greens powder -1cup coconut water -squeeze of fresh lime juice It's
so light, refreshing, and tropically good! This will be a good one in the summer. I think the way I'm eating will feel sooooo good when the warm weather arrives, but right now - it's hard to drink something cold in the morning when it's cold and rainy. There is a reason why coffee shops are so popular in the Pacific Northwest! ***Tip: If you have a Vitamix, and you want the juice not all of the pulp... just use a straw! The pulp naturally floats to the top and all of the juices settle at the bottom. You can also use a cheesecloth when you pour. Cheers to your health!!!
