Tomato Jam

Tomato jam is my childhood favorite, whenever my mom makes it at home, I finish it with in a couple of days.

                                                        Tomato Jam

Ingredients :
Tomato - 1/2 kg
Sugar - 1 cup
Cardamom powder - 1 tsp
Salt - pinch
Lemon juice - 1 tsp

Method :
1. Boil the water, add tomatoes to it and cook until tomatoes develop a crack. Switch off the flame take out the tomatoes from hot water, keep it aside and allow it cool.

2. Peel off the tomato skin, add it to a blender and make a smooth puree out of it.

3. Add puree, sugar, cardamom powder and a pinch of salt to a pan and mix it well.

4. Cook it in low flame until thick consistency is reached (it takes about 10 - 15 minutes to reach this consistency) Just before switching off the flame add lemon juice and give it a good mix.

5. Once it is cool, store it in a dry glass bottle.

Notes :
  • You can even add cinnamon to the jam
  • Adding a tbsp of ghee before switching off the jam gives a good flavor and aroma to the jam.
