Struggling to get healthy options into my children’s lunch boxes so I resorted to google. After modifying a few google recipes I ended up with this yummy slice that the kids and the adults are loving.
Muesli Slice
Ingredients:
- 4 cups of good quality cereal/muesli (we opted for a super healthy blend with oats, coconut, sunflower kernels, pumpkin seeds (pepitas) quinoa flakes, rice bran, linseed and chia seed)
- 150g butter
- 1/2 cup honey
- 1/3 cup brown sugar
Method:
- Line a 3cm slice/baking tray with baking paper.
- Measure out 4 cups of cereal/muesli into a mixing bowl.
- Melt butter, honey and brown sugar in microwave until sugar dissolves. Bring to the boil.
- Add melted butter mixture to dry ingredients.
- Stir until combined.
- Spoon mixture into tray.
- Press down firmly and allow to cool in fridge.
- Top with melted chocolate ganache (Chocolate and Cream)
- Allow chocolate to set and then cut into slices.
Alternatives:
- As an alternative to chocolate ganache topping, chocolate chips/ sultanas/nuts or dried fruit could be added to the mixture.
- For allergies use a gluten free/nut free cereal blend and substitute butter with Nuttelex for diary allergies.
I’m not sure this slice will make it to the lunch boxes on Monday….
