A few weeks ago, Mother Kalamity brought me four quarts of strawberries that she and her friends in the Land of Old had worked up. She put them in our freezer and told me she wanted me to make jam for them “whenever I could get around to it”. That was a good thing because I had so many things going on there was no way I could get them done right away. She gave me a call last week and asked when I was going to get around to it. Hmmmmm………okay mom, I’ll do it this weekend. I know these ladies love plain strawberry jam and nothing fancy so that’s exactly what I made. I was able to make two full batches which make three cases of the smallest jars. They prefer them because they believe it stays fresher that way. Doesn’t it look good? YUM!
5 Cups sliced strawberries
7 Cups sugar
1 box powdered Pectin
1 pat butter
Directions:
Place strawberries, pectin and butter in non-aluminum pan and stir until a rolling boil is achieved.
Pour all sugar in at once and continue stirring until a rolling boil is achieved again – then allow to boil for 60 seconds – don’t skimp!
Take off stove and ladle into sterilized (in dishwasher) jars.
Top with flats that have been simmering in water on stove.
Screw tops on tight and place in a simmering water bath for 10 – 15 minutes.
Take out and allow to cool in a draft free environment for 24 hours.
Sunday I decided to serve the jam with some homemade biscuits. Only thing is I have never made any. I searched the internet for an easy sure-fire recipe. I found one at Plain Chicken. Stephanie always comes up with the greatest recipes! I made 7 UP Biscuits. So easy and I made them well the very first time!
The ingredients are:
Bisquick – 2 cups (I used Jiffy and I had to use about 2/3 cup more)
½ Cup Sour Cream
½ Cup 7 UP
¼ Cup butter (for melting in bottom of pan)
Directions:
Turn oven on to 450 F.
Cut the sour cream into the biscuit mix.
Add 7 UP and mix lightly.
Put the butter into the pan and put it in the oven to let it melt – I used an iron skillet.
Put some biscuit mix on the table and pat the dough out – don’t roll it.
Using a biscuit cutter or glass, cut the biscuits out.
***Tip: DO NOT twist the cutter – just lift it straight out. If you twist, it will make the dough tough.***
Place biscuits in skillet and place in oven for 15 – 25 minutes or until golden brown.
These are fantastic! My husband loved them. In fact, he said he was at a concession stand yesterday where a woman said she made them with 7 UP and they were raw so he wasn’t thrilled I made them, but now he loves them!
