Sweet Corn Masala Dosai

With a very fast rise in temperature and change in season our food habits also a take a change,though I don't like to see there is a very fast disappearance of fresh green peas,cauliflower, sweet corns and fruits like strawberries and oranges (no much regrets though,one mango is enough to the keep up the spirit :).I am trying to put these veggies to maximum use so I have been preparing a lot of dishes with sweet corns peas etc.I had a bunch of fresh sweet corns and I made these delectable masala with them,the base of this masala dosai.Truly a winner among corn recipes,very simple to make and it blended so well dosai,making a hearty dinner.If you crave something special but do not want to spend much time in kitchen or you wanna masal dosai but not ready to toil in the kitchen with bajai and chutneys,take my word,this dosai is so very tasty and easy to make.The humble dosai can be transformed to a gourmet food within minutes with this tangy spicy and slightly sweet masala with bursting flavor of sweet corn.Do not worry if you are not able to spread thin dosai or stuff the masala properly,just serving this masala as side dish with normal dosai will be great too.
Sweet corn masala dosai recipe
Star ingredients:Sweet corn masala(recipe below) and dosai batter
Time:20 minutes+20 minutes
Yield:10 dosai

Sweet corn masala:
Ingredients:
Kernels from 1 large sweet corn
1 large onion sliced
2 tomatoes chopped fine
2 green chillies slit
1 teaspoon sugar
1/2 teaspoon garam masala
2 tablespoons tomato sauce
1 teaspoon cumin seeds
Salt
oil
Method:
1.Boil or pressure cook corn kernels until soft.
2.Heat a kadai and add 2 tablespoons oil.Temper with cumin and green chillies.
3.Add the sliced onions and saute till translucent.Add the chopped tomatoes and saute till mushy.Add sugar and saute well.
4.Add the corn kernels,salt and tomato sauce.Saute well for 5-7 minutes and set aside.

Keep the prepared masala ready
1.Heat a non stick tava.Spread a ladle full of batter and spread it to a circle as thin as possible(My tava is not very big so I as able to spread only this much).
2.Let it cook for 30 seconds add a teaspoon of oil all over the dosai and also the edges.
3.Once the dosai is cooked evenly,spread a portion of masala over the lower part as seen in the picture.
4.Close with upper half and carefully flip the dosai.Cook from both side carefully as crispy as you need.Serve hot.
Notes:
1.Though I have used non stick tava here,if you have a well seasoned cast iron tava go ahead and make dosai in that.Dosai made in cast iron tava is really tasty.
2.You can play with the flavors and ingredients in this masala.Just keep the sweet corn as star and play with any complementing flavor.
