Sweet Corn Fritters
Ingredients:
- 1 cup boiled sweet corn kernels
- 1/4 cup chickpea flour
- 1 tablespoon rice flour
- 1 onion finely chopped
- 2 tablespoons finely chopped coriander leaves
- 1 tablespoon ghee
- 1/2 teaspoon black pepper powder
- Rock salt to taste

Method:
1. Boil the sweet corn kernels either in a pressure cooker, open vessel or in a microwave.
2. Add the boiled sweet corn to a grinder jar. Add a little water and make a coarse paste.
3. Transfer this sweet corn paste to a mixing bowl. Add all the ingredients except ghee and mix well.
4. The batter should be thick but of dropping consistency.
5. Place a spoon full of the batter on a heated skillet. Flatten it slightly to make a fritter shape.
6. Drizzle ghee and cook the fritters on medium heat until they turn golden brown from both sides.
7. Make small fritters similarly with the rest of the batter. Serve the fritters warm with ketchup or a dip of your choice.
