Ok, so I’m kind of addicted to those quick desserts for one (or two really). I’ve been watching my weight, and smaller desserts help me splurge a little bit without falling off the wagon completely. I found this recipe for Strawberry Cobbler on the web and altered it a bit so that I could lower the calories down a bit. Here’s the result!
Ingredients:
- 3/4 cup organic chopped strawberries
- 1 tbsp turbinado sugar
- 1 tbsp confectioners sugar
- 1 tsp water
- 3.5 tbsp of unbleached flour
- 1 tsp aluminum-free baking powder
- 1 tbsp organic unsalted butter
- 1 tsp grapeseed oil (or almond or vegetable oil)
- 2 tbsps organic milk
Directions:
- Put cut strawberries in mug or jar with confectioners sugar and water. Mix well, then microwave for 45 seconds or cook in a small pot on low heat just until the sugar is syrupy.
- Mix flour, the remaining sugar, baking powder, butter and oil together until the mixture has the consistency of small pebbles. Add milk and gently combine until the dough is clumpy.
- Use fork to put dough on top of strawberry mixture and microwave for 1.5- 2 mins.
- Let it cool at least 5 mins before touching! It will be very hot!
- Serve immediately.
And it’s only 300 calories. (yes, really)
