Stir Fry Moringa (Drumstick) Leaves with Sprout

We Chinese love stir fry dish. Moringa leaves are great for stir fry since it wilt in few minutes. Along with sprout I added fried egg which gave flavor to this simple stir fried moringa leaves. I prepare this dish by cooking ingredients separately. It is worth the effort when you taste it.

Recipe from Vivian Pang’s KitchenStir Fry Moringan (Drumstick) Leaves with SproutIngredients:
(A) Egg
1 Egg, beaten (A grade)1 tablespoon vegetable oil
(B)Sprout 1 teaspoon vegetable oil2 pod garlics, diced1 cup sprout¼ teaspoon salt(C) Moringa leaves
1 tablespoon vegetable oil
3 pod garlics, diced 3 cups moringa leaves, washed (measured after remove from branches)
½ teaspoon salt ½ teaspoon light brown sugar 
Methods:
~Egg
Add in 1 tablespoon vegetable oil in heated wok. Slowly pour in the beaten egg into hot oil as you stir in circulation. Once finish pouring all the beaten egg into wok, bring the heat to medium. Continue stir frying in circular motion till egg turn brown and fragrant. Dish out and set aside.
~SproutWithout washing the wok, add in a teaspoon of oil into heated wok. Add in garlic and stir fry till lightly brown. Bring the heat to high and add in the sprout. Add in salt and give the sprout a quick stir. This takes about few seconds. Dish out and set aside. Sprout is ideal to give some crunchy texture to this moringa dish.
~Moringa leaves dish1. With the same wok, add in 1 tablespoon oil in heated wok. Add in garlic and stir fry till lightly brown. Add in moringn leaves and stir fry few minutes till wilt. Add in salt and sugar. Taste and adjust accordingly.
2. Bring the wok to low heat, add in fried sprout and browned egg. Give the dish quick stir to mix. Turn off the heat and serve.
