I am trying to remember whether I cooked this dish before but I am now documenting it and happy with the result.
What you need:
1 bitter gourd350g beef5 pcs garlic2 tbsp black bean
marinate
1½ tsp soya sauce1 tbsp cornstarch1 tbsp wine1/4 cup water1 tbsp oil
Seasoning:
1/3 tsp salt½ tsp pepper1 tsp sugar1 ½ tbsp oyster sauce½ tsp dark soya sauce½ tsp sesame oil
Slurry: 2 tsp cornstarch mix with water
Method:
Soak the black bean with water.
Cut the bitter gourd, cut lengthwise and using a spoon remove the seeds.
Cut into halves. Diagonally slice the bitter gourd.
Mince garlic.
Remove water from the black bean, and roughly chopped.
Slice the beef thinly.
Marinate the beef. In one direction, mix in water little by little. (3 additions)
Add in oil and massage again. Clingwrap and chill.
Bring a pot of water to a boil.
Heat up a wok with some oil and add in the bitter gourd.
Add in sugar and salt and stir fry until well combined.
Pour in the hot water, mix well, cover and cook for 1 min.
Drain the bitter gourd and rinse with tap water.
Heat up the wok, add in a tiny oil, and cook the beef till med rare. Remove.
Add a little oil to the wok again and saute the garlic and black bean till fragrant.
Add in the bitter gourd and stir fry until fragrant.
Add in the wine and 4 tbsp water.
Add salt, sugar, pepper, soya sauce, and dark sauce.
Add in the beef and stir fry quickly. Turn off the heat.
Add in the slurry. Mix well.
Turn on the heat and add in the sesame oil. Stir well.
Serve
