Spinach Stir Fry

Unlike most of people I know I am very fond of greens.Only thing I will always feel really lazy to clean and cut them as I feel it is a tedious process.Spinach is quite easy to clean and cook compared to few other greens and also we love the taste of spinach.When ever I buy spinach I always make aloo palak,dal palak or palak paneer.Some times I also make this rice,but recently when I bought it I was craving some thing south Indian.I made astir fry with just like drum stick leaves(murunga keerai). I added roasted ground nuts at the end as I read in a magazine it will enhance the taste and it did indeed.The shredded coconut and crushed ground nuts were really awesome and took thus simple dish to one whole level up.Serve with your favorite south Indian meal,soul satisfying :)
Spinach stir fry recipe
Star ingredients:spinach leaves,ground nuts(peanuts),shredded coconut
Time:15 minutes
Serves:3
Ingredients:
1 medium bunch spinach leaves
2 dried red chillies
1/2 teaspoon mustard
1 teaspoon urad dal
1/4 teaspoon asafoetida
2 tablespoons roasted crushed groundnuts
2 tablespoons shredded coconut
Salt
1 teaspoon oil
Method:
1.Wash the spinach leaves thoroughly.Blanch for 4-5 minutes with 1/2 teaspoon sugar
2.Heat oil in a kadai and temper with mustard,urad dal,asafoetida and red chillies.
3.Add the blanched spinach,salt and saute for5-7 minutes till water dries.
4.Add the shredded coconut,crushed ground nuts and mix well.Remove from flame and serve hot.
Notes:
1.There is no need to chop the spinach as they may turn into pasted after blanching.
2.Saute well till the stir fry becomes dry in step 3.
3.Takes great with thakkali vatha kuzhambu.
