Spinach Soup

Ingredients:
- 3 cups chopped spinach (palak)
- 1 tablespoon roughly chopped garlic (lehsun)
- 1 tablespoon butter
- 1/2 cup finely chopped onions
- 1/2 cup low-fat milk
- 1/2 cup low-fat milk
- 1 tablespoon corn flour dissolved in cold milk
- 2-3 tablespoon fresh cream
- Salt to taste
- Freshly ground pepper (kali mirch) to taste
Method:
- Heat the butter in a deep and heavy bottom pan
- add the onions and garlic and sauté on a medium flame for 3-4 minutes, or till onions turn translucent.
- Add the spinach and sauté on a medium flame for 2-3 minutes, or till spinach become soft.
- Add 2 cups of water and cook on a medium flame for 5 -8 minutes, while stirring occasionally.
- Switch off heat, allow it to cool completely.
- Once cooled blend it in a blender to a smooth puree.
- Strain the mixture with help of a sieve.
- Pour the purée back to the pan,
- Combine the corn flour- milk mixture and the cream in a bowl and mix well till no lumps remain, add to the spinach puree, and bring it to a boil.
- Serve hot garnished with cream.
