Spinach Parma Pie Recipe

When I was a kid, I didn’t request Green Bean Casserole, I requested Spinach Parma Pie.

A holiday recipe from my mother, this appeared at every Christmas meal–if I had my way, of course!

Other sides may have varied a bit, but this was one that always remained the same.

Yield: 1 9\" Pie

Serving Size: 1 Slice

One of my all-time favorite holiday sides!

Ingredients

  • 2 Cups Seasoned Croutons, Coarsely Chopped
  • 1/4 Cup Melted Butter
  • 1/4 Cup Grated Parmesan Cheese
  • 1 10-Oz. Package Frozen Chopped Spinach, Thawed and Drained
  • 1 Cup Small-Curd Cottage Cheese
  • 1 Cup Monterey Jack Cheese, Shredded
  • 3 Eggs, Beaten
  • 1/2 teaspoon Instant Minced Onion
  • 2 Tablespoons Sour Cream
  • 1/2 teaspoon Garlic Salt

Instructions

  1. Combine Croutons and Butter. Mix well. Press into bottom and up sides of 9" pie plate.
  2. Mix together remaining ingredients and place onto crust.
  3. Spoon a little Parmesan cheese over the top.
  4. Bake 350* for 35 minutes.
  5. Let stand 5 minutes before serving.
