Spice Cookies (Gluten, Dairy and Refined Sugar Free)

I love warm spices in baking especially during Christmas. I guess they remind me of a few dutch cookie recipes (Speculaas and Pepernoten.) I definitely think it is the Anise that makes these taste so great. They are a great addition to a coffee/tea break.

Ingredients

  • 1/2 cup rice flour
  • 1/2 tapioca or arrowroot starch
  • 1 cup sorghum flour
  • 1 tablespoon ground flax seeds in 2 tablespoons water
  • 1 teaspoon psyllium husk
  • 1/2 tablespoon baking powder
  • 1 teaspoon guar gum
  • 1 teaspoon cinnamon
  • 1/4 teaspoon anise (or to taste)
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon cloves
  • 1/4 teaspoon sea salt
  • 1/4 cup warmed coconut oil
  • 1/3 cup maple syrup
  • 1/3 palm sugar
  • 1 teaspoon gluten free vanilla

Directions

  1. Preheat oven to 350 F.
  2. In a mixing bowl combine all dry ingredients except palm sugar.
  3. In a separate bowl combine coconut oil, maple syrup and vanilla until fully blended.
  4. Add wet ingredients to dry and stir until combined.
  5. Roll dough into balls and place on cookie sheet. Flatten just a little with your palm.
  6. Bake for 10-12 minutes.
