Spaghetti with Vegetable Sauce

Though I am an ardent fan of Indian cuisine and can eat day after day through out, I like to explore and enjoy food from world wide.When it comes to international cuisine Italian definitely has a special place.Who can say to no to delicious pizzas,pastas and lip smacking desserts.Now coming to pizzas and pastas,I like to try different kind of pizzas at different outlets but when it comes to pasta I always prefer home made.This is because I add as much vegetables as possible to my sauce breaking all the rules :)
The other day I made spaghetti with vegetable sauce for dinner with loads of vegetables,it was so yummy and comforting.A very simple recipe to make with minimum ingredients.
How to make spaghetti with vegetable sauce-Recipe:

Ingredients:
1 cup spaghetti
1 cup chopped tomatoes
1/2 cup chopped bell pepper+carrots
1 large onion sliced thin
2 teaspoons pepper flakes
1 teaspoon dried basil
1 teaspoon dried oregano
2 cloves garlic crushed
2 teaspoons olive oil or sesame oil
Salt to taste
Method:
1.Bring a large pot of water to boil with salt.Add spaghetti and cook till done.Drain and let it cool
2.Heat oil in a pan,add the pepper flakes and saute for 2 minutes.Add the onions,tomatoes and cook well.Use a potato masher to mash the tomatoes coarsely.Add the other vegetables and again mash and cook for ten minutes,adjust salt,stir in the spaghetti and mix well.
3.Add the herbs and cover.Serve hot.
Time:  30 minutes
Serves: 3

Notes:
1.You can add baby corn or sweet corn to the sauce
2.Mix in half teaspoon oil before serving.
3.Serve in a shallow dish.
4.This recipe is not any restaurant style with smooth pasta sauce,if you want you can blend the vegetables and then cook to get a smooth sauce.
