Boy is this recipe a keeper. I LOVED-LOVED-LOVED it.
Now, you don’t have to be a “single lady” to make this recipe. I simply decided that I’ll be posting a lot of single & double serving recipes now that I’m… independent… and I figured it would be a good way to separate them from the rest of my recipes.
There are a lot of people out there looking for smaller recipes.
Okay, before we get to that… I have some lunch and snack to share.
Lunch and Snack.
For lunch I made a Healthy Choice Café Steamer. I know… totally iffy. But it was surprisingly really really good. This is the Lemon Grass Chicken. I added some red pepper flakes but other than that it’s straight out of the microwave.
Then for snack I had some baby carrots dipped in some Best Foods: sandwich spread.
Seriously, buy the sandwich spread. So good! Really tasty for dipping veggies.
Sautéed Chicken and Apples
Makes 2 servings but at 255 calories, you can eat both. mhmm… just lookin’ out.
Ingredients
- 1 tbsp evoo
- 1 chicken breast (halved), or 3 frozen chicken tenders from Costco
- 2 sprigs fresh thyme
- 1/2 fuji apple, sliced and corred
- 1/2 yellow onion, sliced
- 1 tbsp dijon mustard
- 1/2 cup apple juice
- 1/4 tsp salt
- black pepper
- 1 clove garlic, minced
Directions
- If you need to, defrost your chicken. Heat 1 tbsp evoo over medium-high heat. Cook chicken until golden brown, about 3 minutes a side.
- Add the apples, thyme, garlic, onion, apple juice, salt and pepper to the chicken. Simmer covered on medium heat for 6-8 minutes. Basically until chicken is fork tender.
- Remove chicken, apples, and onion from the pan and plate. Return the sauce to the burner and boil for 5 minutes, or until sauce begins to thicken.
- Whisk mustard into the sauce and top the chicken and apples with it.
Enjoy. I served mine with some basic steamed broccoli and a glass of Sauvignon Blanc.
I prepped all my ingredients before cooking. Just makes things easier.
You can totally use dried thyme, add about 1/2 tsp. I used fresh because I was out of dried and it was cheaper to buy the fresh stuff.
I found this recipe on Real Simple… I just halved it.
Steam means it’s extra tasty, right?
I think yes!
Who am I kidding… the apples are the best part.
