Discover an exhilarating display of gastronomic delights at Edge's annual Pit Stop Brunch during this year’s Singapore Night Race on 21 and 22 September 2024, with extravagant culinary displays and à la minute presentations. On Sunday, 22 September 2024, crank up the excitement with the restaurant’s live DJ, spinning electrifying beats that will keep you grooving in your seats.

Highlights include the Pan-fried Foie Gras Escalope with Fig & Peach Compôte, Hokkaido Scallop with Citrus Espuma, 12-hour Cooked Australia Veal Whole Leg, Crispy Pork Porchetta, a Breakfast Station with your choice of eggs, a Chargrilled Station with handcrafted sausages and hams made in-house by the hotel’s esteemed Master Butcher Haiko Mayer, a Cured Salmon Station with Beetroot Cured Norwegian Salmon, a Peking Duck Station, a Dim Sum Station, and also a Fresh Seafood Station.

Elevate the experience with bottomless tipples, such as Tattinger Brut Réserve Champagne, house red and white wine, cocktails, and beer to commemorate the memorable racing event. Edge has also invited mixologists from PLUME, the hotel's destination cocktail bar, to concoct a selection of exquisite cocktails including Mimosas, Espresso Martinis, Aperol Spritzes, and Bloody Marys, for a perfect brunch affair. Hai Tien Lo

The award-winning Hai Tien Lo presents an exquisite selection of authentic Cantonese cuisine with a modern twist. The creation of its refined menu is presented by Hai Tien Lo’s Executive Chinese Chef Ricky Leung, who is born and raised in Hong Kong with decades of experience in several prestigious Chinese restaurants in Hong Kong and in Singapore.

Savour signature dishes, such as the Roasted Barbecued While Suckling Pig, Smoked Crispy Chicken with Tea Leaves, Baked Canadian Sea Perch Rolls, Crab Meat, and Kumquat Chilli Sauce, Double-boiled Fish Maw, Bamboo Pith, and Fish Bone Broth, and more. Guests can also enjoy authentic dim sum and a meticulously crafted beverage menu with exclusive Chinese teas and exotic Chinese liquors.

Indulge in Pacific Emporium’s specially curated menu inspired by the exhilarating atmosphere of the Singapore Night Race and tune in to a live screening right from the hotel’s grand atrium. Each dish is crafted to reflect the excitement and luxury of this world-renowned event, such as The Wagyu Bun, with streaky bacon, double cream brie, tomato relish, and onion remoulade, Lobster Roll, filled with lobster remoulade and capelin roe served on a house-baked brioche roll, and The Coney Dog, with our popular chili cheese Krensky sausage served in a brioche roll with cheddar cheese and beef con carne.

Race enthusiasts will also enjoy Beer O’clock at Pacific Emporium, where guests can savour a refreshing pint of Tiger or Heineken beer for just $15 nett, or opt for a bundle of four pints at $50 nett.
