Coleslaw is a salad mainly made of shredded raw cabbage mixed with mayonnaise. Coleslaw comes from the Dutch word, koolsla or kool which means cabbage and sla means salad. It is very popular side dish and you can have this any time. It is traditionally served with burgers and grilled or BBQ chicken. You can use the leftover to make delicious sandwiches.
There are many other variety of this delicious and nutritious salad with different dressings.

You can add vegetables that can be eaten raw of your choice to make it more healthy. You should add fresh cut vegetables and serve it chilled. Sometime for a quick coleslaw I use shredded Chinese cabbage and prepare simple dressing of tartar dip and a little salt.

Preparation time : 10 min
Serves : 4
Ingredients :
- 1/2 medium-sized head green cabbage or Chinese cabbage, shredded
- 1/2 onion, chopped finely
- 1/2 cucumber, chopped
- 1/4 red bell pepper, chopped (optional)
- 1/4 medium-sized carrots, peeled and grated (optional)
- 1 cup veg mayonnaise
- 1 tablespoons white vinegar
- 1 tablespoons sugar
- Salt to taste
- 1/4 tablespoon white pepper
Method :
- Take a small bowl and prepare the dressing by mixing mayonnaise, vinegar, sugar, salt and white pepper and keep aside.
- Take a large bowl and add all the vegetables in it, I like using Chinese cabbage, cucumber and onions.
- Pour the dressing prepared in the small bowl to the vegetables in the big bowl.
- Toss the salad to coat it well and serve it cold.
