Side Dishes of Summer

During the Summer, one of my favorite things to make is a turkey burger with jalapenos inside -- topped with peppers, tomato, and avocado.  

Yum. However, I can be pretty stumped when it comes to 'healthy' side dishes.  These two are delicious options.  Bonus:  the leftovers are just a good! 

{Sweet Potato Fries}

Ingredients1 potato per person (if small), 1/2 if larger [I used 2 large potatoes]1 tbsp season salt (like low-sodium Lawry's) 1 tbsp olive oil

DirectionsPreheat oven to 400 degrees Peel and wash potatoes - cut in half then slice into "matchsticks" or "wedges" if you preferLine baking sheet with aluminum foil Add potatoes - sprinkle seasoning and olive oilToss to coat wellBake for 20-25 minutes (or until your desired crispiness), flip halfway through cooking time
These can't get any easier.  
{3 Bean Salad with Blue Cheese + Prosciutto}

Ingredients1 lb green beans, rinsed (fresh steam-in-bag is perfect)2 cans chickpeas 1 package (steam-in-bag) shelled edamame 1/4 c blue cheese crumbles 2 slices prosciutto, chopped  1 shallot, finely diced  
Dressing1/4 c extra virgin olive oil 1 lemon zest + juice 1 tsp white wine vinegar 1 tsp fresh garlic 1 tsp fresh chopped parsley 1/2 tsp salt + pepper 

DirectionsCook green beans until just tender (I used fresh steam-in-bag)Remove green beans from heat and cool completelyDrain and rinse chickpeasCook edamame per package instructions and cool completelyFinely chop the shallot  Meanwhile, mix dressing and whisk well In a large bowl, mix the 3 beans and shallot together.  At this point, you can combine the remaining ingredients, or let cool in the fridge until it's ready to serve. When you're ready to serve, add the blue cheese and chopped prosciutto Add the dressing and toss to coat. 
This salad is packed with protein, and it so light and delicious!
