Thanksgiving is a little more than 2 weeks away and I am thrilled. This is my holiday to break it down in the kitchen and make my family a traditional Thanksgiving meal. When you grow up in a Hispanic home, Thanksgiving isn't celebrated the same way so I have made it my goal to have a traditional Thanksgiving for my family every single year! Along with a delicious turkey and potatoes, I always make stuffing. Stuffing is honestly my favorite part of the meal and every year I make the same Sausage and Cranberry Stuffing.
Thanksgiving in our home is a big deal. We have Thanksgiving dinner around 6pm and the table is set for at least 20! Cooking for this many people isn't easy and if you are hosting Thanksgiving dinner for a crowd, make sure you start early. I always brine my turkey two days ahead of time, make desserts on Tuesday and Wednesday and make as many sides as I can beforehand. My Sausage and Cranberry stuffing is made the night before and put in the fridge. Then around 5pm on Thanksgiving day, I bake it in the oven. Simple and delicious, my favorite kind of food!
Sausage and Cranberry StuffingServes 8-10
Ingredients: 1 bag of cubed bread or 15 slices of loaf bread, cubed1 onion, chopped5 tbsp butter5-6 maple sausage1 large red apple1 cup fresh cranberries1 cup chicken stock
Cook sausage according to package directions, chop and set aside.
In a large pot over medium-high heat. add butter and onions. Cook about 2 minutes.
Add bread crumbs and mix together. Add chicken stock and cook over medium heat for about 2-3 minutes. Meanwhile, preheat oven to 375 degrees.
I know some people cook their stuffing in a casserole pan but I prefer to use a baking sheet. I like my stuffing a little crispy on the outside and soft on the inside. Line a baking sheet with aluminum foil and spray with baking spray. Spread bread mixture on pan. Top with chopped sausage.
Add cranberries and chopped apple pieces. Combine and bake in oven for about 30 minutes.
After 30 minutes, remove from oven and let cool.
One of my favorite parts of Thanksgiving are leftovers. Now to be honest, when you cook for a family like mine, there are rarely leftovers but I am always prepared just in case.
