As the monsoon begins in full force, it becomes really hard to wake up and go to work in the morning. It's incredibly tempting to just sit by the window with a cup of hot tea and a plate of pakodas, watching the rain fall. Speaking of pakodas, we have today a healthy pakoda recipe that'll not just comfort you during the damp weather but will also give you your daily quota of vital nutrients. Made with our best seller, Sathumaavu Health Mix, this is one must-try recipe!
Ingredients:
- Sathumaavu Health Mix - 1/3 cup
- Gram flour - 1/4 cup
- Rice flour - 1 tbsp
- Big onion - 2, sliced
- Red chilli powder - 1/2 tsp
- Hing/Asafetida - 2 pinches
- Finely chopped green chillies - 1 no
- Curry leaves - few, chopped
- Coriander leaves - few, chopped
- Mint leaves - few, chopped
- Ginger - 1/2 inch piece, chopped
- Hot oil - 1 tbsp
- Ghee - 1/2 tsp ( I used frozen ghee)
- Water - Very little ( say 1.5 tbsp)
- Salt - as needed
- Cooking oil - to deep fry
Method:
1. In a wide bowl, take all the ingredients except cooking oil and ghee.Mix everything well without adding water; the onions will release some water as you mix.
2. Heat oil to deep fry. Take a tbsp of hot oil and add to the flour. Add ghee and mix well. Then sprinkle a few drops of water and make a dough.
3. To check if the oil is ready, drop a tiny amount of batter into it. If the batter rises to the surface immediately, the oil is ready. Reduce the flame to medium high & pinch in a portion of batter and drop in the oil, letting it fall gradually.
4. Cook till onions turn golden brown. Drain the oil on a kitchen napkin and serve.
We're stating the obvious here, but these little treats are best eaten fresh! Serve them with tomato sauce or chutney, if they don't disappear before you get time to plate everything and bring it to the table!
