Gul papdi is a traditional sweet dish popular in the Indian states of Maharashtra and Gujarat. It is a very healthy, melt in mouth fudge made from whole wheat flour, ghee and jaggery. Here I have used My Little Moppet Food’s sathumaavu mix and organic jaggery along with whole wheat flour to make this gul papdi and ghee. The fudge is studded with almond slivers and flavored with cardamom powder. This Sathumaavu gul papdi can be served as a dessert during festivals or had as a healthy breakfast along with a glass of milk. Organic jaggery from My Little Moppet Food’s is free of impurities and can be directly used in the recipe. The fudge remains good at room temperature for about 2 weeks in an air tight container.

Method:
1. Heat a thick bottom pan on medium flame. Add ghee to it.
2. Once the ghee melts completely lower the flame and add whole wheat flour and sathumaavu mix to it. Roast the flours in ghee for 5-7 minutes or until you get a nice aroma. The color of the flour will become darker on roasting. Keep stirring the flour continuously to ensure it does not catch the bottom of the pan.
3. Next add jaggery powder to the roasted flour and mix well. Keep stirring and cooking the mix further for 2 minutes or so. Lastly add cardamom powder. Mix well and put off the flame.
4. Transfer the gul papdi mix to a greased tray and press well with the back of the spatula. Garnish with almond slivers. Press the slivers with the back of the spatula so that it sticks to the fudge.
5. Cut the fudge after 5 minutes into desired shape using a knife.
6. Allow the fudge to cool down completely. Now remove the pieces and serve. Keep the remaining fudge in air tight container and use as per need.
This recipe is very easy and doable as it does not involve any syrup formation as most of the traditional fudge recipes call for. The fudge can be made under 30 minutes. So it’s not only enjoyable to eat but also enjoyable to make.
