Ingredients:
- 2 salmon fillets
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 8 small tortillas
- 2 ripe avocados
- 1/4 cup pomegranate seeds
- 1/4 cup diced red onion
- 1/4 cup chopped cilantro
- Juice of 1 lime
- Salt and pepper to taste
Instructions:
Preheat the oven to 400F 200C
Place the salmon fillets on a baking sheet lined with parchment paper
Drizzle olive oil over the salmon fillets and season with salt, pepper, cumin, chili powder, and garlic powder
Bake the salmon in the preheated oven for 12-15 minutes, or until cooked through and flaky
While the salmon is cooking, prepare the guacamole by scooping the flesh of the avocados into a bowl
Mash the avocado with a fork until smooth, then add the pomegranate seeds, diced red onion, chopped cilantro, lime juice, salt, and pepper
Mix until well combined
Once the salmon is cooked, remove it from the oven and let it cool slightly
Then, flake the salmon into bite-sized pieces
Warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side
